    Traditionally, followed in Kerala, the “uppilitta manga” preservation technique is used to store raw organic mangoes for a longer period of time. Cut the raw mangoes in half, top them in a big clean and dry glass or ceramic jar. Now pour saltwater that was previously boiled and cooled over these mangoes.
